Healthy Avocado Toast
Very flavorful and  filling and healthy

Ingredients:
1 - avocado
2  - slices of  toasted seeded bread
1/2 tsp- olive oil
2- large eggs, fried sunny side up
alfalfa sprouts
1-  thin small sliced Roma  tomato
1 pinch -  cayenne pepper
Instructions :
Dice, then scoop avocado into a small bowl
Add 1/2 tsp olive oil and smash and stir,
then toast  the bread slices.
Fry eggs sunny side up.
Spread avocado on the  toast.
Add alfalfa sprouts and sliced tomato
Cover with fried egg
Sprinkle with Cayenne

Serve hot

Turkey Sausage Patties



 Ingredients:
1 lb. ground turkey 
2 teaspoon garlic powder
1 teaspoon ginger powder
1 teaspoon rubbed sage
1 teaspoon fresh rosemary, minced
1 teaspoon  salt 
1/2 teaspoon black pepper 
1-2 tablespoons coconut oil 

Options below: Fresh  or frozen

Directions :

 - In a medium bowl, combine and mix together turkey,  garlic, ginger, sage, rosemary, salt and pepper.

- Shape mixture into small patties by rolling them into a ball in the palm of your hand and then flattening them. The mixture should make about 10  med. sized patties.

- Heat 1 tablespoon of coconut oil in a large skillet. Add enough patties, so they are not crowded in the pan. You will have to cook these in two batches.

- Cook them for 4-5 minutes on the first side, until lightly browned and the patty lifts from the pan easily. Flip and cook them on the second side for 2 to 3 minutes, or until they are browned on both sides. Move cooked patties to a plate and set aside.

- Option notes* For making fresh patties, add one  finely diced  Granny Smith Apple with the peeling to the mixture. And Fry according to the recipe.

For Frozen Patties:  Place  the uncooked patties in a freezer container and put wax  paper in between layers and freeze, to thaw,  place in the refrigerator overnight. Then fry according to the recipe.

COCONUT FLOUR PANCAKES WITH BLUEBERRY SYRUP

Delicious and healthy!  
makes 8 small  pancakes or 5 med size as shown

Ingredients
4 Eggs
3 Tbsp melted coconut Oil
1/4 cup buttermilk  * batter thickens as it  sets  add more buttermilk if  necessary
1/4 cup Coconut Flour
1 Tbsp Sugar
1/4 tsp  Salt
1/4 tsp Baking Powder

Directions
In a large bowl whisk together eggs, oil and buttermilk until well combined.
In a separate bowl sift coconut flour, sugar, salt and baking powder.
Add dry to wet and thoroughly mix until there are no lumps.
Ladle 2 Tbsp to 1/4 cup batter per pancake onto a hot skillet. Cook until bubbles begin to form on the top, about 4 minutes, then flip and cook on the second side.

Blueberry Syrup recipe
1/2 c. sugar
1 T. cornstarch
1/3 c. water
2 c. fresh or frozen blueberries

In a saucepan over medium heat, combine sugar and cornstarch. Stir in water gradually. Add berries; bring to a boil. Boil, stirring constantly, for one minute, or until mixture thickens. Serve warm, or pour into a covered jar and keep in the refrigerator for several days. Makes about 2-1/2 cups.

Ultimate Breakfast Strata


You'll need:
1- 16 oz  Potato  bread loaf
1 lb fully cooked ham, cubed (  I used Turkey ham)
1 1/2 cups shredded Swiss
For the custard:
6 large eggs
1 cups whole milk
1 1/2 cup low fat half & half
1 tsp. cinnamon
1 tsp salt
1/4-1/2 tsp black pepper
 maple syrup
4 slices of stick  butter
Directions:
Butter the bottom and sides of a 9 x 13 inch baking dish.   Slice the potato bread into 3/4 inch slices.  Cut each slice through the middle then into bite size cubes.
Layer half of the cubes in the bottom of the baking dish.  Arrange the cubed ham over the bread.
Sprinkle  shredded Swiss cheese over the cubed ham layer, and arrange the top layer of  bread cubes over the cheese.
Take the sliced butter and cut into little pieces and dot over the bread cubes.
Custard:
In a medium mixing bowl, whisk together 1 cup of whole milk, 1 1/2 cups of low fat half & half, 6 large eggs, 1 tsp salt,  1/4 tsp black pepper and 1 teaspoon  cinnamon Pour the custard evenly over the layers of bread cubes, ham and cheese.
Using a spoon, gently press the bread cubes into the custard, then cover tightly with plastic wrap.  Place the dish into the refrigerator to chill overnight.
Bake:
Preheat oven to 350 and remove plastic wrap , lightly cover with  foil and bake for 30 min.  then remove foil and drizzle strata with maple syrup and bake for another 20 min.  Serve with maple syrup.  serves 12

Corn Fritters

1 cup sifted flour

1 can whole kernel corn drained

¼ teaspoon sugar

1 tsp. melted butter

½ cup  milk

1 egg slightly beaten

- Mix in a med . Bowl, the flour and sugar together.  Beat in egg, butter and milk.  Add corn and mix well.  Drop by  spoonfuls in to hot oil.  (See notes * below.) and  fry till golden brown. Makes about  12 fritters. Serve them with  syrup.  They are delicious with  Breakfast food.


* for  a healthier oil option, I use coconut oil.

Fried Apples and Cranberries

This  recipe was inspired from a dish I remember as a child, it is pretty common in the Appalachia`s for breakfast  and was served  with a plate of biscuits.
  I added cranberries and it is  now a holiday  favorite for my family.                                                                             Serves 6.
Ingredients

12 - Red Delicious Apples, peeled, cored, and cut into wedges   * notes

2 -  tablespoons  lemon juice

5 - teaspoons butter

½ -  cup light brown sugar

1 -  teaspoon cinnamon

½ - -cup of dried Cranberries

* notes…As you peel and cut the apples sprinkle them with Lemon Juice to prevent them from turning brown.

In a  large skillet melt the butter on med heat and add the apples.  Then add the brown sugar and the cinnamon, stir  all together and cover with a lid, cook for about 5 min. and  reduce the heat to med. - low add the cranberries cover again cook for about 10  more min. till apples are tender not mushy and serve warm.
Serves well Pork also.
